For example, roe meat cooked on the brazier in the main hall of the restaurant is served with the most famous Cumberland game sauce of berry jam, red wine, and lemon & orange peel.
The Chef has added some new game dishes to the menu: deer steak with sweet & sour sauce, guinea fowl, partridge in friture with spicy sauce in lettuce, game sausage on a brazier with fried onion and three kinds of sauces.
